The spring thaw has begun, the days are getting longer and I’m ready for warmer weather. Let’s kick off spring with a garden salad accompanied by a nice glass of Country Time Lemonade! I enjoy having a salad every day for lunch. I try to switch it up, sometimes I make a tuna salad, sometimes an egg salad or chicken salad, but today I’m going to make a nice spring salad. Not only that, but I’m going to bypass the store-bought salad dressing and make my own, homemade vinaigrette dressing (recipe below!). Of course, with spring on the mind, I’m going to top off my lunch will be a nice glass of Country Time Lemonade, using the new Country Time Lemonade Starters.

New Country Time Lemonade Starters

Let’s get started with the balsamic vinaigrette dressing. It’s really simple to make your own homemade balsamic vinaigrette dressing and it only takes a few minutes to do. As a matter of fact, you may already have most of the ingredients in your cupboards already. I only needed to pick up some balsamic vinegar, the rest I already had on hand.

Here’s the recipe for my wicked easy homemade vinaigrette salad dressing. It’s super easy to toss together and wont take you more than 10 minutes. The recipe makes about a cup of dressing, which is quite a bit. After making the dressing, it’s ready to go – just pour it right over your salad, toss and enjoy!

Ingredients

Balsamic Vinaigrette Dressing

  • 1/4 cup balsamic vinegar
  • 3/4 cup olive oil
  • 2 cloves of garlic, chopped
  • 1/2 tablespoon onion, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon brown sugar

Spring Salad

  • Red & green romaine lettuce
  • Other leafy greens of your choosing
  • Green, Red, Orange and Yellow peppers
  • Onion
  • Cucumber
  • Tomato

Directions

  • Assemble Salad
  • Whisk balsamic vinegar, chopped garlic, onion, brown sugar, salt and pepper in a bowl.
  • Whisk in olive oil a little bit at a time until it’s all added
  • Pour over salad, toss and enjoy with  glass of Country Time Starters Lemonade!
